Deb's Chili Con Carne

I firmly believe that chili is a meat dish and, therefore, has no beans. If you insist on having beans with your chili, prepare them separately and add them at serving time. 

Having said that, what follows is my version of chili with a little spice which comes primarily from Ro-tel tomatoes.

 Ingredients:

1 Tbsp olive oil or sufficient to coat bottom of sauce pan
1 large red onion, chopped
1 pound ground beef
5 Tbsp chili powder
1 Tbsp garlic powder
2 tsp salt or to taste
1 15oz can tomato sauce
1 10oz can Ro-tel tomatoes (mild, medium, or hot)

Instructions:

In a large sauce pan on medium heat, sautee the onion in the olive oil until the onion is translucent. Do not brown the onion. 

Add the ground beef and brown.

Reduce the heat to medium low and add the tomato sauce. Stir thoroughly. Add the spices (chili powder, garlic powder, and salt) and stir thoroughly. Finally, add the Ro-tel and stir thoroughly.

Allow to simmer on medium low heat for 15 minutes then reduce to low heat and simmer another hour, stirring occasionally. 

Serve this chili with a dollop of sour cream, a spoonful of shredded cheese, and a spoonful of diced onion.

Enjoy leftovers the next day as this chili usually tastes better then.
